Ignite the Senses Dinner - Note: Date Change

We are delighted to invite you to ”Ignite the Senses” dinner an intimate food and wine experience whilst supporting our charity Layton Vision Foundation, aligned with the LVF Eye Centre and Ophthalmology Research Centre.  Hear from Professor Chris Layton an update about the latest cutting edge eye research and gene therapy.  Our menu is created by David Oke, former long standing Executive Chef of The Tattersall’s Club.  Each course will be paired with award winning selective wines carefully chosen by our Vigneron Phil Manser, from Wine Direct, another proud and fiercely independent Australian business.

Our Chef David Oke:

David Oke, former Executive Chef of The Tattersall’s Club for 15 years, believes in serving fresh food with real flavour sourced from trusted suppliers he has worked with for many years.  Each course will be paired with wine.

Our Vigneron Phil Manser:

Whilst Phil in his own words “I am fluent in the language of wine-wank, I maintain wine is only as good as the company you’re keeping, or the occasion, which is why you’ll still catch me chancing my arm with the house red or throwing down a Coopers Red after a tasting.”  Phil's career in wine has been a mix of independent retail in the early 90s, to working and studying in the UK knocking over the first two hurdles to the Master of Wine. After returning to Australia, he has championed a long list of small, independently owned wineries. He has also worked as cellar hand, picker, pruner and a bunch of other inglorious roles, all to keep his feet firmly on the ground and convey a greater appreciation of what happens before wine makes it to your glass.

About Layton Vision Foundation:

Since 2016, eye research charity Layton Vision Foundation has promoted and assisted in the eradication of blindness through vision research and clinical services.  It provides the next generation of Australia’s research scientists the skills in advances gene and cellular based therapies necessary to develop cures for blinding diseases.  Our Brisbane vision research is focused on single treatment cures suitable for low-resource settings.
